So. Let’s get down to business. When it’s sticky hot outside, I’m always on the hunt for quick, easy meals I can throw together and be done with it. For me, that usually entails putting together some type of sauce or dressing first that I can build a meal around. Throw it over a salad, some pasta, some good-quality meat. To me, that’s easy. It also comes in handy because I can make one giant batch at the beginning of the week to use throughout, and still enjoy versatile meals that don’t become monotonous.
Enter: Avocado Pesto Sauce. The perfect addition to pasta and meat dishes, with the added benefit of a good-for-you ingredients list! Oh, and it requires one step to prepare: throw everything into a blender/food processor and turn it on. I’ll take it!

I coated this batch over pasta and added roasted tomatoes, sunflower seeds, and more avocado. And I dare say it was tasty!

Avocado Pesto Sauce
Makes enough for 16oz pasta
2 Large handfuls spinach
1c Packed fresh basil
1/4c Olive oil
1T Lemon juice
2 Garlic cloves
Add all ingredients to food processor or blender and puree until smooth. You may need to stop to scrape down the sides a couple of times to ensure everything incorporates. If you’re having difficulty getting things to move along, you can add water 1 tablespoon at a time to facilitate.
Add sauce to pasta or meat dishes, or if you’d prefer to try it as a salad dressing, thin it out with a 1:1 ratio of olive oil and water until you reach your desired consistency. You may need to adjust seasonings to taste. Enjoy!
