To beat the heat I’ve created these frozen treats, which couldn’t be easier to put together! A creamy mango puree is layered with fresh blended watermelon, lightly sweetened to perfection. Quick, satisfying, and definitely necessary this time of year!

Refreshing Mango-Melon Popsicles
Makes 8 popsicles
2c watermelon chunks
1T liquid sweetener of choice (optional)
Blend mango into puree + set aside
Blend watermelon chunks with sweetener (if using) until smooth.
Layer mango + melon purees into popsicle mold as desired, leaving about 1/4 inch of room from the top of the mold. Freeze for 6 hours or overnight. When ready to eat, run popsicle mold over hot water for 10-20 seconds each until popsicles slide out smoothly, and enjoy!
