Recently I grabbed lunch at Panera Bread and tried their Thai chicken salad. And I looooved it! Surprise. It had everything that makes a salad right. Crisp greens. Sweet fruit. Something crunchy. A good amount of protein. And a delicious dressing, sweet and light.
So what did I do? I went home and kept craving it, hello! So I made this salad + dressing to snack on, inspired by the delicious ingredients in Panera’s version.
The best part about this meal? It takes about ten minutes to prepare. My kind of meal! The salad ingredients are chopped up and tossed together. The dressing is whisked together in a bowl, or you could place the ingredients in an airtight container and shake it up to mix it all together.
I made this version sans protein, because I didn’t have any on hand. But I’m positive it would be absolutely delicious with some grilled chicken! Mmm…
Make this salad so you can feel like you’re eating a rainbow.
Thai Salad + Peanut Dressing (V)
2 Heads romaine lettuce, roughly chopped
3c Chopped thai veggies (such as purple cabbage, broccoli, carrots)
3c Mandarin orange wedges
2c Pineapple, diced (not pictured)
Limes for garnish, optional
5T Sesame oil
1T Soy sauce
2T Sweet chili sauce
1 Clove garlic
1T Maple syrup
1T Peanut butter
1. For the salad, roughly chop romaine after rinsing and add to a large salad bowl. Add oriental salad ingredients (I bought mine in a ready-made mix), mandarin oranges, and diced pineapple. Throw in the peanuts now, or garnish over the top as needed.
2. To make the dressing, simply add all ingredients to a bowl and whisk until combined. OR add to an airtight container and shake until blended together. Pour over salad, add garnishes, and enjoy!
